**Prep Instructions**
1. Cut chicken breasts into bite-sized strips or cubes
2. Season chicken with salt and pepper
3. Prepare all vegetables: shred lettuce, shred carrots, dice tomatoes, and thinly slice red onion
4. Set out tortillas and have all wrap ingredients ready for assembly
**Cooking Instructions**
1. Heat olive oil in a large skillet over medium-high heat
2. Add chicken pieces to the hot skillet in a single layer
3. Cook chicken for 5-6 minutes, stirring occasionally, until golden brown and cooked through (internal temperature 165°F)
4. Pour 1/4 cup Global Wok Sesame Buffalo Wing Sauce over the cooked chicken
5. Toss to coat evenly and cook for 1-2 minutes until sauce is heated through and chicken is well coated
6. Remove from heat and set aside
**Assembly Instructions**
1. Warm tortillas in a dry skillet or microwave for 15-20 seconds to make them more pliable
2. Lay each tortilla flat on a clean surface
3. Spread 2 tablespoons of ranch or blue cheese dressing down the center of each tortilla
4. Layer shredded lettuce, carrots, tomatoes, and red onion on top of the dressing
5. Add the sesame buffalo chicken on top of the vegetables
6. Sprinkle crumbled blue cheese over the chicken
7. Drizzle with remaining Global Wok Sesame Buffalo Wing Sauce
8. Fold in the sides of the tortilla and roll tightly from bottom to top
9. Cut wraps in half diagonally
**To Serve**
1. Garnish with sesame seeds and fresh cilantro if desired
2. Serve with extra ranch or blue cheese dressing on the side
3. Add optional toppings like avocado, bacon, or celery if desired
